🇨🇳 [你好] is fine, but in many coffee shops in China people often skip it and go straight to the order, especially if it's busy. Adding [我想点…] still sounds polite and natural.

💬 [什么风味的] means "what kind of flavor," with [的] turning the flavor phrase into something that describes the coffee. You can reuse this with other choices too: [什么口味的？] or [什么豆子的？]
